Meatloaf was once viewed as a home cooked comfort food but has come back to restaurant and bar food menus with the increased popularity of gastro pub settings. Meat loafs are now become more complex than ever with combinations of pork, beef, duck etc and varies cuts (ground, liver, etc) and are being wrapped in everything from bacon, to caul fat for added flavor. Herbs like sage and specialty ingredients like port wine are added to create more of a crepinette than a meatloaf. Standard Ketchup sauces are being infused with pickled peppers, chipotle seasonings and more.

  • Meat Loaf Mix 3lbs
  • Onion Diced 1 cup
  • Melted Butter 2 oz
  • Onion Soup Mix 1oz
  • Ketchup 0.5 cup
  • Grated Parmesan 0.25 cup
  • Whole Eggs 3 ea
  • Bread Crumbs 0.25 cup
  • Worcestershire sauce 4 tbsp
  • Garlic minced 1 tsp
  • meat seasoning 2 tbsp

1. Preheat the oven and grease a loaf pan
2. Combine above ingredients in a mixing bowl
3. work to incorporate evenly
4. Press into a loaf pan tightly
5. Bake until an internal temperature of 145 F
6. Remove from oven and cool completely
7. Once cool slice into 12 pieces, reheat in a sauté pan or on a grill.
