We thought it would be nice to go with a corn salsa or relish to really highlight some summer flavors. This could be used as a topping on a southwestern burger, dip with salsa, condiment for tacos and more.
- Fresh summer corn(white or yellow)
- Tomatoes diced
- Red Onion Diced
- Lime Juice
- Green Bell Pepper, diced
- Red Bell Pepper, diced
- Jalapeno, fine dice
- Black beans (optional)
1. We suggest grilling the corn on the cob to help bring out the natural sweetness as well as add some char flavoring.
2. Then cut the corn kernels off the cob and combine with the additional diced vegetables, season with salt & Pepper and serve cold.
