We wanted to share a recipe for a compound
butter that we like to use with Steak. Compound butters when used on a steak or in a chicken kiev provide a light butter sauce but also a bold flavor. The compound butter we are sharing everyone is one that we like to use for steak dinners to dress them up just a bit. The steak already eats “like butter” but the use of butter gives the dish a whole new perspective. This butter is simple and enhances many flavors of the plate.
Ingredients:
- 1lb butter softened
- 1 oz garlic blanched
- 1 oz Parsley
- 1/2 tbsp lemon juice
- Ground black pepper
- Kosher salt
In a mixer fitted with a paddle, work the butter until it is light and soft. Add desired ingredients to flavor. continue mixing until all ingredients are incorporated evenly. Place softened butter on plastic wrap or parchment. Roll into a log and freeze/refrigerate until firm. Cut into round discs and use on freshly grilled steak. Allow the butter to melt on the steak.
Optional: roast or saute the garlic before adding to the butter for more flavor diversity
Other uses: use to flavor mashed potatoes, melt and toss with warm popcorn, stuff a chicken Kiev, soften as a seasoned table butter.
