Situation:

Cincinnati Ohio: Rolling Hills Hospitality Group was in need of menu development, design and concept creation services from CSG. We were engaged to begin the project the Spring of 2015 and we opened the restaurant in December 2016. The goal was to create a contemporary Gastro Lounge/ Retro Bistro with familiar classic flavors and signature offerings.

Their Need:

The scope of our service captured all the kitchen design direction, equipment selection and testing. Menu Creation, Culinary Tasting and concept presentations to the development team in Cincinnati.

Primary Services Provided:

  • Kitchen Design Direction and Equipment Selection
  • Recipe Development/Recipe Manual
  • Operations Audit for menu recipe compliance
  • Sourcing and Specification of all Raw Materials
  • Developed Custom-Written Detailed Operations Manual
  • Directed the Training of Staff Pre-Opening and Opening
  • Conducted remote on location culinary tastings of the menu prior to opening.
  • Design Labor Matrix and staffing job descriptions
  • Created all operational SOP’s for cost control and production management.

Results:

Project was successful and the restaurant is enjoying great success with menu and food. All operating systems are implemented and working well.
